“Zuke” is a dish made by marinating raw fish in soy sauce and Sake. It originated from the distinct Tokyo-style of sushi called “Edo-Mae sushi” and was a method for food preservation before modern refrigeration. In our menu, we use the fatty belly of the tuna instead of the more commonly used lean red meat.

We combined this with a technique from another dish called “Tataki”, and smoked the fish with Straw, giving the Zuke a smoky aroma and sear to compliment its rich, savory flavor.
