The days are getting longer and spring is certainly on its way! But there's one component of our menu that always holds true: a focus on local, seasonal, and sustainably sourced PNW seafood. 🐟🦐🦪 With Pacific Sable Fish, or Black Cod, in seasons nearly nine months of the year, we love pairing it with a vast array of peak-season produce, cellar sauces, and complimentary textures. It's a true delicacy of the PNW, and we love to showcase it for our guests throughout the year.

Next Tuesday, March 11, our own Chef Aaron Tekulve of Surrell and Chef Luke Kolpin of Cedar & Elm are collaborating for a one-night-only, showcasing their shared passion for local, sustainable ingredients — intentionally paired with the wines of Columbia Crest Winery. This event will kick off the festivities for Taste Washington, a week-long celebration of Washington food and wine. This is a truly unique moment in the dining season. As winter turns to spring, we're making the most of the season and our cellar. That means putting together dishes that showcase local products from the PNW, winter-grown vegetables, ferments, preserves, and sauces. Unlike spring and summer, where we'll even serve produce raw to highlight its quality, wintertime has its own instruction manual. We let veggies ferment and marinate in the flavors of seasons past, and we use depth-inducing preparation methods like lying root vegetables directly on the hot coals of our grill. The result is a menu that uses time, slowness, and dormancy to highlight the magic of winter.

With the days getting longer and the breeze a little warmer we're anticipating the start of spring, but it's still several seeks until we'll see the first harvest. In the meantime, we invite you to explore our winter menu reservations at the link in our bio. Cheers!

Our culinary mission is founded on place: seeking out and featuring the best locally grown, harvested, and foraged foods. It's an amazing movement to be part of, but in the PNW there's another piece of the puzzle: locally grown wines. 🍷🍇

A bottle of wine might have a (much!) longer shelf life than berries or oysters, but WA wine is WA farming and agriculture. Every bottle was planted, nurtured, and fermented by our friends and neighbors. That's why when March rolls around, a month dedicated to the celebration of WA food and wine, we consider ourselves so, so lucky to know the folks behind the bottles on our wine list.

On Friday, March 28, we're pairing our Late Winter Menu with Latta, Lucius, and international bottles curated by winemaker Andrew Latta. As part of our Inspiration Dinner series, each course will feature a side-by-side pairing, exploring the relationship between Washington Wines and their maker's inspirations. We're so excited to feature Andrew Latta, who shares our enthusiasm for local terroir and lesser-known, uniquely delicious WA varietals.

About Andrew Latta:
Latta Wines was founded in 2011 by winemaker and owner Andrew Latta. Andrew came to wine through years of restaurant work, from bussing tables in his home state of Kentucky all the way to a Sommelier position in Thailand, directing one of the finest wine programs in the country. Those restaurant years still give tremendous context to the way our wines are made and presented.  Leaving that world behind, Andrew dove head first into production in Walla Walla almost 20 years ago. A ten year odyssey from harvest hand to Winemaker at a notable Washington Winery set the stage for the launch of Latta Wines.

A dish where Winter meets...Summer. ❄️☀️

One of the joys of our winter menus comes from foraging in our own cellar for preserves and ferments, pairing the flavors of seasons past with the flavors of deep winter. This dish features carrots in a variety of preparations and textures, specifically designed to reduce waste. From there, we paired with summer and autumn preserves for a dish that celebrates this moment in all its nuance.

Sarah has inspired and collaborated on innumerable aspects of Surrell, but when it comes to hospitality, no one has taught or influenced us more. She's a person who lives and breathes hospitality, knowing exactly how to meet people with kindness and generosity. Her authentic warmth will immediately make you feel taken care of and, with her thoughtfulness and consideration, you truly will be. The lessons we've learned from Sarah, the sincerity and care she brings to every interaction have formed an irreplaceable part of our core values, our hospitality practices, and our mission to provide a warm, comfortable, and inclusive fine dining experience.

With that, we hope you and yours are celebrating your love in style this evening, whatever that means for you. We're so grateful for all those who've celebrated love at our restaurant, from birthdays to engagements, from anniversaries to rehearsal dinners. Our next Inspiration Winemaker's Dinner on Friday, March 28, will explore the wines of Latta and Lucius, both by winemaker Andrew Latta. In side-by-side style, he'll be pairing his own wines with the bottles from around that world that have influenced their flavors, winemaking practices, and philosophies. 

was founded in 2011 by winemaker and owner Andrew Latta, whose years working in restaurants have influenced his approach to winemaking. Almost 20 years ago, Andrew dove head first into production in Walla Walla. A ten year odyssey from harvest hand to Winemaker at a notable Washington Winery set the stage for the launch of Latta Wines and now Lucius, with the winery located in Seattle since 2015. His wines highlight uncommon varietals and are extremely small production, mostly Rhone offerings are put forward from sustainable vineyard sites after fermentation with native yeast and aging in mostly neutral french barrique and puncheon.

This dish is a journey out of the PNW and back to Surrell's roots. Our name is very much an ode to Chef Aaron's lineage. All the first-born women on his mom's side, his grandma, his mom, and now his daughter, share the middle name Surrell. In looking for a bit of inspiration this winter, it only made sense to travel down memory lane and into his grandma's Northern California citrus orchard.

This dish centers around Meyer Lemon, something not traditionally grown in the PNW that holds a lot of sentiment and culinary memory. This isn't the first time childhood flavors have been adapted and embellished for the restaurant menu, and this dessert is something we're truly excited to share. It embodies our motto of "familiar, yet different", and we'd love for you to try it!

By the Glass this winter, and ready to pair.

While the wine pairing is built dish by dish, piecing together specific flavors and textures, the glass pour list is an exercise in deliciousness, variety, and versatility. As stewards of WA Wine, we love the opportunity to use our glass pour list to provide a combination of familiar and lesser-known varietals, staple producers and new favorites. But the thing every bottle has in common? They all pair with food in interesting and undeniable ways.

We're so honored to work with wineries who make wine with food and wine, bottling some of the state's best fruit with food pairings in mind. We're particularly loving these winter reds from Result of a Crush, Dossier, and Kevin White Winery.

In the years since we've opened, Creativity and Hospitality have become inextricably linked. Two sides of the same coin, both necessary to the vision and mission of Surrell, with creativity influencing our approach to hospitality, and vice versa.

Creative hospitality helps us to think outside the box, question the limits of our little restaurant, and take care of guests in ways we sincerely hope bring meaning and memories. Hospitable creativity means your experiences are always at the core of our culinary and experiential development.

We hope one example of this can be found in our efforts toward inclusive fine dining. It's been such an adventure watching service grow and expand to include Omnivore, Pescatarian, Vegetarian, and Vegan options, an entirely gluten-free experience (including our new gluten free bread!), the four-course in addition to the tasting menu, and the non-alcoholic pairing in addition to the wine pairing. Each of these inclusive options started out as a push toward hospitality that's led to even greater creativity and inspiration in our kitchen. We sincerely can't wait to see what more 2025 will bring!

Bubbles and Seafood: A more perfect match might not exist. Especially at Surrell, where we're privileged to work with some of the best seafood on the continent, and some of the absolute best sparkling producers in the state.

We'll be joined for this event by Chris Sherry and his partner in life and wine, Miggy Quadros-Sherry, the team behind Elentone and by Andrew Gerow, Gabriel Crowell, and Matthew Doutney, the team behind Tirriddis. They've chosen their favorite wines for us to pair, course by course, and it's sure to be a night to remember.

 We're so excited to combine the experience of a winemaker's dinner with one of our themed menus, this time featuring seafood, for a uniquely local food and wine experience. We sincerely hope you'll join us for this one-of-a-kind evening!

Our private dining/ catering company brings the experience of a great restaurant to you. We work directly with you to create your unique event that you and your guests will remember forever.
