This year through Plate of Nations, Rainier Restaurant is serving up their ong choy salad with a choice of beef or tofu — the dish made famous by Anthony Bourdain when he stopped by to film his show Layover. It’s a labor-intensive dish — there’s a designated cook to hand-carve the ong choy (water spinach) before tossing it up and with fried shallot and peanuts and served with anchovy sauce and pineapple. And it’s well worth the effort, says Lisa: “We didn’t include it on the menu just because of Anthony Bourdain — it’s a dish with art behind it.”
